Where The art of the French croissant begin...
Four Fuellies was founded by the daughter of one of the founders of Four Leaves - Kiara.
Kiara studied in France during her university years and fell in love with French croissants. She attended many baking classes, but none of the techniques or recipes could give her an authentic taste of croissants.
Until one day, a classmate introduced her to a master baker named Alex Micheal in Paris, who told her the secret tips for making authentic croissants. After succeeding in creating an authentic croissant, the first thing that came to Kiara's mind was to bring this to Singapore - where she calls home.
And so began the 36-hour journey of croissant baking in that little red dot...
All the ingredients are imported directly from France, including the flour, butter and even the sourdough. The dough itself takes 24 hours to proof. The kneaded dough then needs another 24 hours to ferment and develop aroma and flavour.
Once the dough has completely relaxed, the baker must stretch the dough and marry it with butter. This is the most critical part of the process in which we excel.
Finally, the dough pieces are carefully hand-shaped into the iconic shape and left to proof for another 1.5 hours before being sent to the oven to bake and cool, which takes another 2 hours.
Each step is crucial to give you an authentic croissant. And most importantly, our croissants are baked fresh daily so you can enjoy the freshness!
